SPICED HONEY TIRAMISU
130ml Barlovska Spiced Honey liqueur
1 packet of lady fingers biscuits (200g)
100g caster sugar
250g dark chocolate
300ml freshly brewed coffee
This recipe is based on Jamie Oliver's and is for a large dessert.
Whisk 4 egg yolks with 100g caster sugar. Add 30ml of Barlovska Spiced Honey.
Combine 750g mascarpone cheese into the mixture.
Beat the egg whites with a pinch of salt.
Add egg whites to the mixture and fold ingredients together until smooth.
Brew 300ml coffee and let it cool.
Line a large, clear dish with lady fingers.
Add 100ml of Barlovska Spiced Honey to the coffee, then splash biscuits with half the mixture. Let it soak.
Melt 200g chocolate with 50g diced butter in a bowl over a hot steam bath. Let it cool.
Smooth melted chocolate all over the biscuits with a spatula.
Add cream mixture on top of chocolate and smooth it out.
For the top layer, soak each biscuit in the remaining coffee mixture and place gently on top of the cream layer. Then, cover the biscuit layer in cream.
Shave the remaining chocolate and decorate the cake with it.
